By using leftover ham and boiled eggs, this Ham Salad goes together in a snap! Most of the time consuming work is done ahead of time, you’ve cooked the ham and boiled the eggs. You may even have deviled eggs leftover, they make this come together even faster if you do. And the sweet pickles that no one ate from the relish tray are perfect for this dish.
So go to the fridge and grab the ham, you’ll need 2 cups once it’s chopped in the food processor. Throw in oh, let’s go with 4 hard-boiled eggs and 1/2 cup of mayonnaise and 1 tablespoon of mustard or the same amount of deviled eggs and 3 tablespoons of chopped up sweet pickles. Don’t forget to add a dash of salt and pepper as well.
Now you’re ready to add the ham salad to those leftover dinner rolls for a quick and easy lunch time treat.

- Leftover deviled eggs (8 halves)
- 3 tablespoons chopped sweet pickles
- salt and pepper to taste
- Dinner Rolls or Bread
If you use leftover hard-boiled eggs substitute this for the deviled eggs
- 4 hard boiled eggs
- 1/2 cup mayonnaise
- 1 tablespoon mustard
Instructions
Using deviled eggs
- Chop your ham in a food processor
- Mash deviled eggs with a fork and add to ham
- Add chopped up sweet pickles, salt and pepper to taste
- Mix together well
Using hard-boiled eggs
- Chop your ham in a food processor
- Mash eggs with a fork and add to ham
- Add mayonnaise and mustard
- Add chopped up sweet pickles, salt and pepper to taste
