Happy Monday! Did you enjoy your weekend? We enjoyed most of the day off on Saturday, watched Nick play baseball and had dinner out with some friends.

We have been chatting about Traditional Easter Recipes, and Deviled Eggs are a must have for Easter Dinner. But since we are changing traditional recipes and giving them a bit of a face lift, Doug decided to add a few ingredients and came up with Bacon Cheese Deviled Eggs.

And with all those Easter Eggs you will be coloring…we knew you would want a yummy recipe for Deviled Eggs!

I think there are as many Deviled Egg Recipes as there are cooks. Seems like everyone has there special ingredient that they like to add but bacon just makes everything better. Doug originally thought about making a Western style Deviled Egg but I wasn’t too sure about the addition of green peppers. So he decided to simplify it a little and just stick with the bacon and the addition of some green onion.

Garnished with a crumble of bacon and green onion and these are ready to impress, not that my boys need any incentive to munch these babies down.

Bacon Cheddar Deviled Eggs

Description

A delicious twist on an old stand-by. Recipe from PocketChangeGourmet.com


Ingredients

Scale
  • 12 Hard boiled eggs
  • 4 slices Bacon (cooked & crumbled)
  • 2 tablespoons Cheese, finely shredded
  • 1 Green Onion (finely chopped)
  • 1 cup Mayonnaise
  • 1 tablespoon Mustard
  • ¼ teaspoon black pepper

Instructions

  1. Cook bacon {we like to cook bacon in the oven}
  2. Slice hard boiled eggs length-wise and scoop out yolks, place yolks in a mixing bowl.
  3. Mash yolks and mix in the bacon,cheese, green onion,mayonnaise,mustard and black pepper.
  4. Spoon or pipe the mixture into the egg whites.
  5. Refrigerate until serving.

I’m not a huge Deviled Egg fan but these were really good.

Doug says…
Anything with bacon added HAS to be good!
