It’s hard to believe that summer is almost here! This weekend marks the unofficial start to summer with Memorial Day arriving on Monday. I love having a barbecue with friends and family every year to honor those who have sacrificed their lives for our freedom. Barbecues are one of the best parts of summer and this weekly menu plan is full of ideas for barbecues this weekend and on into the summer.
After a holiday, I am usually pretty exhausted. When I know that the weekend is going to be a busy one, I try to plan the first few days of the week. A one dish dinner, like Barbecue Chicken and Rice is the perfect way to make things a bit easier for me, especially if I’ve pre-chopped my veggies. Keeping dinner easy when I know we’ll be busy or tired is the key to avoiding expensive dinners out during the week.
