May always brings about “good eats” as far as I’m concerned. We start the month off with one of my favorite feasts with Cinco de Mayo. I just love Mexican food and any chance I get to have some makes me very happy. We close out the month with the official start to barbecue season when Memorial Day arrives. I would love to use a monthly menu plan like this. There are just 2 of us, but I’m tired of trying to come up with meal plans month after month. My only complaint about most of these meal plans is there are no “planned leftover” meals. If I cook a whole chicken on Sunday, I plan to use the leftovers on Monday and Wednesday for dinner and sometimes for lunch other days. That’s the kind of meal plan I continue to search for.
I do love your ideas and your website, however.
That is a great idea. We typically have leftovers, if there are any for lunch. We will see what we can come up with for you.
