Happy Monday my friends! Did you enjoy your Fourth of July holiday? Ours was great, we were able to take a little break from work and catch lots of baseball games, 7 to be exact and in 102 degree weather, it was a bit steamy. But thankfully the temperature has cooled down a bit, just in time for our County Fair this week, more baseball and I’m off to the Evo Conference this weekend in Utah.

Today we have a delicious recipe for you from the Walmart Meal Solution App on Facebook…Lemon Herb Chicken. The chicken in the recipe is roasted, but we decided with the heat we would put it on the grill {and I bought a new cast iron skillet that Doug was anxious to try}.

In case you haven’t been on the Meal Solution App, let me tell you a little about it. First, of course, there are lots of budget friendly recipes, but they also feature a meal planning area and even better, you can add your photo of the dish you made and have the chance to be featured as “Chef of the Week“. And with over 54,000 fans on the Meal Solution App, I know that’s exciting!

How to Submit for Chef of the Week

  1. Go to Meal Solution App on Facebook and “like” it
  2. In the upper right hand corner, right below the “like” button, you will see the Meal Solution App Icon, click on it
  3. Click “Let’s get cookin’, in the middle of the page
  4. Now you can search for a recipe, in the left hand corner
  5. After you find the recipe, cook and take a picture
  6. Then you can click on the “I Made This” button
  7. Then simply upload your photo

Now let’s chat a bit about the Meal Planning feature…simply look through the recipes, click on a recipe you like and click “Save Recipe”, it will automatically be saved, and then from there you can create a Meal Plan like the one I made above.

I know for us, and I’m guessing lots of you, getting stuck in a cooking rut is all too common. Even though I plan for the whole month, I seem to make the same dishes over and over. I like how you can gather your recipes in the Meal Solution App and have them to choose from. And even if you don’t use the App to plan your weekly menu, you can gather some new recipes.

Grilled Lemon Herb Chicken

Grilling a whole chicken is a lot easier than you think. Recipe from PocketChangeGourmet.com


Ingredients

Scale
  • 57 pound roasting chicken
  • 1 lemon
  • 1 tablespoon chopped Rosemary leaves
  • 1 tablespoon chopped Thyme leaves
  • 3 cloves garlic, minced
  • 1 can {10 3/4 oz} Condensed Cream of Chicken Soup
  • 1/4 cup dry white wine

Instructions

  1. Preheat grill to medium-high heat {or oven to 375 degrees}
  2. Wash chicken inside and out
  3. In a medium bowl, combine lemon zest, lemon juice, soup, herbs, garlic and white wine
  4. Reserve 1 cup soup mixture for gravy, if you like
  5. Place chicken in cast iron skillet or heavy pan
  6. Grill on medium-high heat for 20 minutes
  7. Baste with more soup mixture
  8. Continue grilling for about 1 hour or until golden brown and juices run clear
