While cucumbers are available year around, it’s during the summer months that buckets of cukes appear at the Farmer’s Market or from your garden, as cucumbers are one of the easiest vegetables to grow and they love the warm weather. Cucumbers lend themselves to so many different applications – fresh eating, salads, relishes, pickles, and even soups – and are so refreshing with their light & bright flavor and crunchy texture, that we find we use a lot of them in the summer!

Finding fun and different recipes using cucumbers wasn’t a problem – keeping the list manageable was! Like our previous Farmer’s Market Recipes, I’ve focused on the best of the best that also covers a variety of recipes whether you want to use the cucumbers in a salad, preserve them for the winter, or add them to your morning smoothie!
