One of our favorite summertime salads is a simple Fresh Vegetable Salad with tomatoes and cucumbers. We normally make a bowl full that lasts for a couple of days but if your out camping it’s just as easy to quickly get this on the table in under five minutes. The best thing about this salad is you can add just about any vegetable to it that you have, it’s hard to mess this up…good for the kids to help with.
This time around I decided to add some young spring onions to the mix and to top it off an easy vinaigrette with Nakano Roasted Garlic Seasoned Rice Vinegar to enhance the flavor. These small onions come loaded with the same flavor as their big brothers without the sharpness of age. Kind of sounds like someone I know.

Ingredients
- 1 English cucumber
- 2 medium tomatoes
- 6 young spring onions
Vinaigrette
- 1/2 cup Extra Virgin Olive Oil
- 1/2 cup Nakano Roasted Garlic Seasoned Rice Vinegar
- 1 teaspoon ground mustard
- pinch of salt
- pinch of pepper
Instructions
- Peel cucumber and onions, halve tomato and remove seeds and pulp.
- Slice cucumber and onions into thin slices.
- Cut tomato into bite size pieces.
- Toss together and add vinaigrette prior to serving.
Vinaigrette
- Mix all ingredients together in a sealable container, shack prior to serving.
