It’s that time of year again! Time when football starts taking over the minds and conversations of the workplace, school and home. Adults and children alike start dressing in their favorite team colors and sportswear, especially anywhere close to game day. Cars are adorned with flags and window stickers.

Playful banter takes over between those who root for opposing teams. I love football season. It is a great reason to invite friends and family over, watch the game, and have amazing food. It’s even better when you get to go to a game. The air is electric with excitement and anticipation. There is really nothing else like it.

Sweet-Spicy-Veggie-Wings

The food that is associated with football or what is referred to as tailgating, is often high in fat. I want to give you an option that is not only low in fat but is also bursting in flavor. Guaranteed, even meat loving men will be going back for seconds and thirds when they try these Sweet and Spicy Veggie Wings. In fact, if you are having a crowd over, it might be a good idea to prepare in advance and double it.

Sweet-Spicy-Veggie-Wings

Traditional wings are made with chicken, however I would venture to guess that no one will miss the meat in this recipe. The other ingredient that is a bit different is Silk Almondmilk. I have actually been using Silk in my morning Chai Tea Latte and loving it! I honestly can not tell the difference, in fact, I like the Silk better. It’s a creamy consistency, which is perfect in my Latte.

The sauce is a combination of sweet and spicy, with a little heat from red pepper flakes and Sriracha hot sauce. The recipe doesn’t call for a lot, but you can always add more if you like more heat.

The cauliflower is coated with flour, seasonings and Silk Almondmilk. Then baked, not fried, to make it healthier.

This simple head of cauliflower is transformed into a spicy/sweet Thai dish that will make everyone’s head spin. It is just that good.

Ingredients

Scale

Sauce

  • ¼ cup sweet chili sauce
  • ¼ cup low-sodium soy
  • 2 tsp Sriracha hot sauce
  • 1 Tbsp peanut oil
  • 1 tsp red pepper flakes
  • 1 tsp fresh grated ginger

Cauliflower

  • One large head cauliflower
  • ½ cup flour
  • ½ cup Silk almond or cashew milk
  • ½ tsp salt
  • ½ tsp garlic powder
  • ¼ tsp black pepper

Garnish

  • 12 green onions
  • 2 Tbsp chopped peanuts

Instructions

Sauce

  1. Combine all of the sauce ingredients together in a bowl. Whisk and set aside.

Cauliflower

  1. Preheat oven to 450 and spray a baking sheet with cooking spray
  2. Cut the cauliflower into small florets. (The smaller they are, the faster they will cook)
  3. Whisk together flour, milk, and seasonings
  4. Toss cauliflower in batter until thoroughly coated
  5. Arrange cauliflower evenly on baking sheet
  6. Bake for 20 minutes until they are almost done but not quite golden brown
  7. Remove from oven and pour sauce over cauliflower
  8. Return to oven for another 5 minutes
  9. Remove from oven, toss around in sauce
  10. Return to oven for another 5 minutes
  11. Remove from oven. Let cool for 5-10 minutes
  12. Place florets in a serving bowl and garnish with peanuts and scallions
