We’ve been sweating through the Summer heat along with the rest of you and finding ways to cool off. This refreshing Strawberry Salad with Poppy Seed Dressing is sure to refresh your weary bones.
Like all good recipes you can adapt the ingredients to what you have in your pantry, we have always used the slivered almonds for carmelizing but I didn’t have time to make another trip to the store so this time sliced almonds were used. The resulting salad turned out great.
It’s light and refreshing, and the strawberries definitely make the salad. The original recipe was found on Taste of Home, but we changed it up a bit and used Holland House White Wine Vinegar in the dressing. The addition of the White Wine Vinegar, really kicked up the flavor!

Ingredients
- 1/4 cup sugar
- 1/3 cup sliced almonds
- 1 bunch lettuce (rough chopped)
- 1 small onion (thinly sliced)
- 2 cups fresh strawberries (halved)
- 1/4 cup mayonnaise
- 2 tablespoons sugar
- 1 tablespoon sour cream
- 1 tablespoon milk
- 2-1/4 teaspoons Holland House White Wine Vinegar
- 1-1/2 teaspoons poppy seeds
Instructions
- In a small heavy skillet over medium-low heat, cook and stir the sugar until melted and caramel in color, about 10 minutes. Stir in almonds until coated. Spread on foil to cool; break into small pieces.
- In a large bowl, combine the romaine, onion and strawberries. Combine the dressing ingredients; drizzle over salad and toss to coat. Sprinkle with coated almonds.
