Eating healthy is on most everyone’s mind right now. Whether it’s a New Year’s Resolution for you or someone you know, we all need to eat better, including ourselves.
Sure we can all toss together a salad to eat with dinner or for a meal, but for me, I want it to taste really good too. So why not add strawberries for flavor and added nutrients, and almonds for a little crunch and even more nutrients.

Like all good recipes you can adapt the ingredients to what you have in your pantry, we have always used the slivered almonds for caramelizing but I didn’t have time to make another trip to the store so this time sliced almonds were used. The salad turned out great.
It’s light and refreshing, and the strawberries definitely make the salad. I was surprised to find good strawberries this time of year.
Do you know how to tell if the container of strawberries is good? Turn it over and smell it, if it smells like strawberries then they are ripe and ready to eat. Sometimes you will come across a container, turn it over and there won’t be any smell at all, you don’t want those.
The addition of the White Wine Vinegar in the dressing, really kicked up the flavor, using Holland House White Wine Vinegar not only added flavor but also made it a healthy choice.

Ingredients
- 2 tablespoons sugar
- 1/4 cup sliced or slivered almonds
- 1 bunch lettuce (rough chopped)
- 1 small onion (thinly sliced)
- 2 cups fresh strawberries (halved)
Poppy Seed Dressing
- 1/4 cup mayonnaise
- 2 tablespoons sugar
- 1 tablespoon sour cream
- 1 tablespoon milk
- 2–1/4 teaspoons Holland House White Wine Vinegar
- 1–1/2 teaspoons poppy seeds
Instructions
Almonds
- In a small saucepan, add the almonds and sugar, cover over medium low heat, stirring constantly until golden {watch carefully – they will burn quickly}
- Pour onto wax paper and cool
- Break into pieces
Salad
- In a large bowl, combine the lettuce, onion and strawberries.
- Combine the dressing ingredients; drizzle over salad and toss to coat.
- Sprinkle with coated almonds.
