If your August is shaping up like mine is then you are busier than ever. Work is hectic, the kids have something going on every night and dinner often gets forgotten about until the last minute. This use to happen to me all the time, until I started planning our dinners. The weekly menu plan for this week is going to save me from grabbing those take out menus or serving cereal and calling it “Breakfast for Dinner Night.”
This week we’ll actually be making 8 dinners because on Sunday we’ll be preparing two batches of Beefy Noodle Casserole. One will be frozen for later use. These frozen dinners can be planned for nights when you know you won’t be home until just before dinner or when you will have to leave a note for your teen to pop dinner in the oven before you get home.
Meatless Monday – Fresh Green Beans, Sweet Corn, Tomatoes and Cucumber Salad
Tuesday – Breakfast – Pancake Puffs with Fresh Fruit and Fried Potatoes
Wednesday –Mexican Mac & Cheese
Thursday – Pulled Pork Sandwiches with Root Beer Barbecue Sauce with Veggies and Dip
Friday – Grilled Southwest Chicken Wraps, Chips and Dip
Saturday – Slow Cooker Roast Beef, Mashed Potatoes and Corn
Sunday – Beefy Noodle Casserole (make 2/freeze 1) and Salad
Dessert of the Week – Peanut Butter Swirl Bars
