I love making soups because they are easy to pull together in a hurry and they are so easy to adapt to whatever ingredients I have on hand.
Most soup bases utilized a few staple vegetables. Then you simply add veggies, grains, flavorful seasonings, a protein, and garnish, if desired.
Don’t be afraid to substitute one veggie for another- some of the best recipes begin this way!

Chef’s Note: I have to sing the praises of Better Than Bouillon beef and chicken bases. I utilize them in many of my soup and stew recipes because the jar is so easy to have on hand in the refrigerator and I never have to remember to buy broth. There are other varieties as well and they are such a timesaver. If you prefer, you can use canned broth or stock.
Pro Tip: Mirepoix
Many soups begin with the basics of onion, carrot, celery, otherwise known as mirepoix (meer-pwah). These vegetables are chopped and sautéed with a bit of oil or butter to form the base flavor of the soup or stew. If you are prepping these vegetables for one dish, double the quantity. Chances are that you will utilize them later in the week and they store beautifully for a few days in the refrigerator. Cut once, cook twice:)
