We are holding onto Summer as long as possible and the exotic flavors of the tropics definitely remind us of those hot days.

The busy days of Summer, often carry into back to school with all the schedule changes and after school activities. The Caribbean Jerk Chicken Sandwich is super easy to prepare, we started with a whole chicken that we roasted in the Slow Cooker, shredded the chicken and added Caribbean Jerk Marinade and heated it a bit on the stove.

The Plantain Chips have a combination of chili powder and cumin giving them a little kick, but not too spicy. And the grilled pineapple adds a little more tropical flavor to the sandwich, as well.

Although Plantains look like bananas, they are very different. Plantains are starchy and less sweet than a banana, they need to be cooked before eating them and the peels are either green, yellow or black, depending on the stage of ripeness. Green plantains can be fried and are starchy like a potato. Yellow plantains are slightly sweeter and softer and may be grilled. Black plantains are the sweetest and may be baked.

Plantains are full of vitamins and minerals, especially Vitamin A and C. And can be used as potatoes in many recipes and they are a great alternative that will bring new flavors and excellent nutrition at a low cost. Plantains are also very filling and full of fiber.

While shopping for Plantains, be sure to look for the new label system for each color. It has the Discover Plantains website on them, with lots of recipe ideas. You can find Plantains in the produce section of most Walmart Stores, but check with your local store for availability.

Caribbean Jerk Chicken with Plantain Chips

Ingredients

Scale
  • Caribbean Jerk Chicken Sandwich
  • 1 whole chicken or 45 breasts {cooked in Slow Cooker, bought at the store}
  • 1 bottle Caribbean Jerk Marinade
  • Buns
  • Plantain Chips
  • Lettuce
  • Pineapple, grilled

Plantain Chips

  • 2 Yellow Plantains, sliced thinly
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt

Instructions

  1. Cook chicken, then shred with fork
  2. Add marinade to chicken and heat over low on stovetop just until heated through

Plantain Chips

  1. Thinly slice Plantains and place in bowl
  2. Drizzle with olive oil and sprinkle on spices, mix to coat
  3. Place on cookie sheet in a single layer
  4. Bake at 400 degrees for about 15-17 minutes, watching carefully

Grilled Pineapple

  1. Slice pineapple and grill over medium-high heat for a few minutes or until grill marks appear and pineapple is juicy

Assemble Sandwich

  1. Add shredded lettuce to bun, top with a slice or two of grilled pineapple, Caribbean Jerk Chicken and add Plantain Chips
