- Caribbean Jerk Chicken Sandwich
- 1 whole chicken or 4–5 breasts {cooked in Slow Cooker, bought at the store}
- 1 bottle Caribbean Jerk Marinade
- Buns
- Plantain Chips
- Lettuce
- Pineapple, grilled
Plantain Chips
- 2 Yellow Plantains, sliced thinly
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
Instructions
- Cook chicken, then shred with fork
- Add marinade to chicken and heat over low on stovetop just until heated through
Plantain Chips
- Thinly slice Plantains and place in bowl
- Drizzle with olive oil and sprinkle on spices, mix to coat
- Place on cookie sheet in a single layer
- Bake at 400 degrees for about 15-17 minutes, watching carefully
Grilled Pineapple
- Slice pineapple and grill over medium-high heat for a few minutes or until grill marks appear and pineapple is juicy
Assemble Sandwich
- Add shredded lettuce to bun, top with a slice or two of grilled pineapple, Caribbean Jerk Chicken and add Plantain Chips
