This fluffy salad, which in my opinion is actually a dessert, is perfect for picnics, cookouts, or celebrations yet easy enough for a weeknight meal. Let’s learn how to make Watergate Salad.

I would bet money that either a cookout or family reunion you have had Watergate Salad. It actually is one of my favorites. I could literally eat the whole bowl.

Did you know that this salad was originally made popular by Kraft Foods, when they debuted the recipe to promote their pudding mix called Pistachio Pineapple Delight. Rumor has it that a Chicago newspaper reprinted the recipe in the 1970’s and renamed it Watergate Salad. Of course, I’m pretty sure because of all of President Nixon scandal that was happening.

Either way, I really am not too concerned with “how” the salad or dessert got it’s name, I just know it’s super easy to make and tastes delicious.

How to Make Watergate Salad

Only 5 ingredients are all you need for this luscious Watergate Salad – crushed pineapple, mini marshmallows, Pistachio pudding, pecans and whipped topping. In about 5 minutes you have a delicious salad and into the refrigerator it goes for at least 1 hour before serving it.

Whatever the occasion, this Watergate Salad is the perfect addition. You could use it for cookouts, picnics, 4th of July or other celebration during the Summer and it’s quick and easy for the holidays as well. I will let you decide whether you think it’s a salad or dessert.

Ingredients

Scale
  • 1 (20 oz) can crushed pineapple, undrained
  • 1 cup mini marshmallows
  • 1 box (small) instant Pistachio pudding
  • 1/2 cup pecans, chopped
  • 1 (8 oz) tub whipped topping, thawed

Instructions

  1. Dump pineapple into large bowl
  2. Sprinkle with dry pudding
  3. Add mini marshmallows and pecans
  4. Stir to combine
  5. Fold in whipped topping
  6. Refrigerate at least 1 hour before serving
  7. Store leftovers in fridge
