The marinade made with fresh herbs and wine gave the chicken a delicious blend of flavors as well as keeping it moist.

Grilled Chicken Skewers with Herb and Wine Marinade

Ingredients

Scale
  • 24 skinless, boneless chicken breasts {depending on how many you are serving}

Marinade

  • 2/3 cup Hot to Trot White Blend 14 Hands Wine
  • 1/3 cup extra virgin olive oil
  • Juice of 1 lemon
  • 2 tablespoons apple cider vinegar
  • 3 tablespoons fresh basil, chopped
  • 3 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ground pepper
  • 1/2 teaspoon salt

Instructions

  1. Combine all ingredients for marinade in a bowl and set aside
  2. Soak wooden skewers 20-30 minutes
  3. Cut chicken into strips and thread onto skewer
  4. Place skewers in a 13×9 dish and pour marinade over
  5. Place in fridge over night or several hours
  6. Heat grill to medium-high and cook skewers about 7-10 minutes or until juices run clear
  7. Serve with rice or other side dish and a glass of 14 Hands Wine

Notes

Prep time does not include marinating. Allow at least 8 hours to marinade chicken
