We have this ongoing fight in our house… Doug absolutely despises sweet potatoes. I think it’s pretty funny myself and was quite surprised when he suggested we make some Sweet Potato Fries for the Thanksgiving Leftover Party.

Doug really can’t even stand the smell and won’t even touch any dishes that have sweet potatoes in them. No, it’s not a phobia, he just doesn’t like them. I believe that most families are just like ours when it comes to potato preferences. We are pretty much split down the middle, Nick and I love sweet potatoes while Andrew and Doug do not and Casey of course likes both. Always up for something different we made these to give them a try.

Sweet Potato Fries served in 6 glasses

They’re easy to make, we just prepared them the same as we would have done making regular oven fries.

Preheat your oven to 425 F, while the oven is coming to temperature peel and slice the sweet potatoes into 1/2 inch fries. Place in a bowl and drizzle with oil, salt, and pepper to taste then mix to coat. Place the fries on an oiled cooling rack placed on a baking sheet and cook for 20 to 30 minutes depending on how crispy you like your fries turning once halfway through.

For years I have fixed canned yams with toasted marshmallows on top…oh the ooey, gooey, deliciousness… I LOVE them! So when Doug mentioned the Sweet Potato Fries, I knew we had to have some Marshmallow Dip to go with them. Take a cup of marshmallow fluff and add 1/4 cup of Hellman’s mayonnaise and a pinch of pumpkin pie spice and blend together.

Being a good supportive husband, Doug did give the fries a try but didn’t like them. That’s okay…all the more for us!

Ingredients

Scale
  • 4 large sweet potatoes
  • 1/4 cup cooking oil
  • salt and pepper

Dipping Sauce

  • 1 cup Marshmallow Fluff
  • 1/4 cup Hellman’s mayonnaise
  • pinch of pumpkin pie spice

Instructions

  1. Preheat oven to 425F
  2. Peal and cut sweet potatoes into 1/2 inch fries
  3. Toss in bowl with cooking oil and salt and pepper to taste
  4. Place on an oiled cooking rack
  5. Cook for 20-30 minutes to desired crispiness turning once

  1. I used sour cream instead of the mayo and a dash of nutmeg it was great not to sweet perfect combo with the fries, couldnt stop test tastin.lol
