It’s that time again…time for Secret Recipe Club, we are assigned a blog and we create a recipe from them. Last month we made the French Toast, and were excited to see it was one of the favorites. Today we have Lemon Honey Muffins from Cooking is Divine.
We changed the original recipe a bit. The first batch that Doug made were really runny, so we tried again and left the milk out, they turned out great. These are great for breakfast or add a little glaze drizzle to them and they can be dessert.

Ingredients
Scale
- 1/4 cup butter, softened
- 1/4 cup brown sugar
- 1/4 cup honey
- 1 tablespoon lemon juice
- 1 egg
- 1/2 teaspoon vanilla
- 3/4 cup + 2 tablespoons flour, all-purpose
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
Glaze
- 1/4 cup powdered sugar
- Drizzle of milk
Instructions
- In a small bowl, combine the dry ingredients, flour, salt & soda, set aside
- In a medium bowl, cream the butter and brown sugar
- Add the lemon juice, egg and vanilla, cream until well blended
- Gradually add the dry ingredients, blend well
- Preheat oven to 350 degrees and fill muffin tin with liners {we got 8 muffins}
- Bake for 15-20 minutes or until a toothpick inserted comes out clean
- Cool, combine powdered sugar and milk for glaze and drizzle over muffin {optional}
- Prep Time: 5 minutes
- Cook Time: 20 minutes
