Summer is in full swing, and with all the fresh fruits and veggies from your garden or Farmer’s Market, now is the time to serve those special Summer Salads. Not only is a salad a great side dish, but we often serve them for the main dish, especially on hot Summer days.

This Layered BLT Salad has all the great flavors of a traditional Bacon, Lettuce and Tomato Sandwich, but kicked up and served with Fisher Almonds and Dried Cranberries sprinkled on top.

Our family loves Ranch dressing but I wanted to bring a little authenticy to the BLT salad so I combined the Ranch with mayonnaise and added a touch of sour cream to give it some bite. All in all I think it turned out pretty good.

After cooking the bacon in the oven and letting it cool a bit, the salad went together in a snap.

And the addition of Fisher Almonds and Dried Cranberries made the salad complete. Did you know that almonds and cranberries a loaded with all sorts of good vitamins and anti-oxidants, they’re even in a category called “Super Foods” they are so good for you.

Layered BLT Salad


  • Total Time: 25 minutes

Description

A cool, crisp salad perfect for a hot summer night. Recipe from PocketChangeGourmet.com


Ingredients

Scale
  • 1 package (12 ounce) bacon, cooked
  • 4 cups romaine lettuce, chopped
  • 46 tomatoes {depending on size}
  • 1 bag of croutons or make your own
  • 1/2 cup Fisher Sliced Almonds
  • 1/4 cup Fisher Dried Cranberries

Dressing

  • 1/3 cup sour cream
  • 1/2 cup mayonnaise
  • 1/2 cup Ranch dressing
  • pinch of ground black pepper

Instructions

  1. Cook the bacon, let cool
  2. While the bacon is cooking, mix up the dressing.
  3. Chop the lettuce and slice tomatoes
  4. Divide all ingredients in half
  5. In a large bowl, layer the ingredients in this order; croutons, lettuce, tomato, bacon, dressing, repeat
  6. Sprinkle with almonds and dried cranberries
  7. Serve with extra dressing
  • Prep Time: 10 minutes
  • Cook Time: 15 minutes

  1. Let’s see… lately I’ve been making salads with lettuce, tomato, peppers, carrots, celery, refried beans, and taco filling type ground meat.

  3. I love mixed greens, blueberries, sliced strawberries, almonds or walnuts, and raspbery vineregrete dressing. sometimes I add grilled chicken to make it main dish!

  4. My go to salad is a Sprinach & Spring green mix..I like to cut carrots, cherry tomatoes, green & red peppers, black olives, juliene turnips,cucumbers,onions & either feta or bleu cheese…with yyou fave dressing…yuumm…y 🙂

  5. Crisp romaine, crunchy cucumbers, green peppers, a small sprinkle of cheddar cheese and Italian dressing is my go to summer salad!

  22. I am very partial to the Strawberry Poppyseed salad at Panera Bread. I would love to recreate that salad at home.

  46. This salad looks pretty good to me, makes me want a BLT. I like Saladwork’s Cobb Salad with Parmisean Ceasar dressing. It’s very good. I also like to add onions and sundried tomatoes to it. I try to stay away from the sweet stuff.

  47. I like red leaf lettuce with tomatoes, avocado, dried cranberries, and sunflower seeds with blue cheese dressing.

  48. My ultimate summer salad is made with rotini pasta, lots of ripe avocados, chunks of fresh tomatoes, blanched peas and broccoli, mixed well with my primavera sauce: mayo, lemon juice, and lots of minced garlic. It stores for a few days and is perfect for a light summer dinner.
