Sometimes, I like to mix things up a bit and make my own blueberry syrup. If you have the extra time to do this, I HIGHLY recommend it.

You can also mix the dry ingredients ahead of time, store in a resealable bag, and mix in the wet ingredients when you are ready to cook the pancakes.
Once the ingredients are mixed, pour them onto your heated griddle or skillet. Once the bubbles start popping, they are ready to flip!

Ingredients
Dry Ingredients
- 1 cup all purpose flour
- 1 tablespoon white sugar
- 3 teaspoons baking powder
- 1/2 teaspoons salt
Wet Ingredients
- 1 egg
- 3/4 cup milk
- 2 Tablespoons Oil – I use Canola
- cooking spray
Instructions
- In a large bowl, combine flour, sugar, baking powder and salt.
- Add egg, milk and oil and mix well.
- Heat griddle and coat with cooking spray.
- Pour about 1/4 cup batter onto hot griddle.
- Cook until golden brown, about 3 minutes, and flip to cook the other side.
- Serve with butter and maple syrup.

I made these today and added a second egg and some vanilla. They were amazing! This was my first time making my own pancakes and I couldn’t believe how easy and delicious it was!
