As most families, Mexican food is not only one of our favorites, it’s also one of the most pocket friendly meals you can serve. Whether you like spicy food or not {like me}, most Mexican recipes are bursting with flavor. All this week we will be sharing Mexican Basics, beginning today with Classic Guacamole.

The crazy thing is about Guacamole, Doug and I didn’t think we would like. You know how you always tell your children to try it because they might just like it, well we should have taken our own advice. It wasn’t until we visited ALDI Headquarters last Fall, and had a Guacamole challenge that we actually discovered that we liked it.

There are probably as many Guacamole recipes as there are cooks making it. This Classic Guacamole recipe uses the basic ingredients; avocado, tomatoes, onions, lime juice, olive oil, garlic, salt and pepper.

Classic Guacamole

Ingredients

Scale
  • 2/3 cup finely chopped tomatoes
  • 1/4 cup finely sliced green onions (about 3)
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon olive oil
  • 1 to 2 cloves garlic, minced finely
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 2 very ripe avocados, halved, seeded, peeled and mashed coarsely

Instructions

  1. In a medium bowl, combine all ingredients except avocados.
  2. In a small bowl, mash the avocados with a fork, then add to other ingredients and stir to combine well
  3. Serve immediately or cover with plastic wrap and chill for up to 1 hour

Notes

Avocados will brown very quickly, so add them just before serving. The other ingredients can be chopped ahead and stored in fridge if necessary.
