We are a snack lovin’ family! In fact, one of the meals that our boys love the most is when we have Appetizers. These Mini Taco Cups are the perfect appetizer, snack, treat or even a side dish for your Mexican meal.

With just a few ingredients, these mini version of everyone’s favorite taco are a snap to put together. We love serving these Mini Taco Cups with other appetizers for a meal, but they are also perfect for the upcoming March Madness Basketball Games, Movie or Game Night or even to munch on while reading a good book.

The weather is beginning to warm up and soon it will be time to have friends and family over to enjoy time together. Don’t forget to have the Cherry Limeade ready and lots of fun snacks!

Mini Taco Cups

Begin with a taco chip, we like Tostitos Scoops Chips for these, filled with a bit of Refried Beans, Taco Meat and topped with cheese. Into the oven they go for only 10 minutes to heat them through and melt the cheese.

Description

Perfect for an appetizer, snack for Movie Night, or even a side dish for Mexican night.


Ingredients

Scale
  • Tostitos Scoops Chips
  • 1 pound hamburger, cooked and drained
  • 2 tablespoons Homemade Taco Seasoning
  • 1 cup of Salsa
  • 1 can Refried Beans – you will about ¼ of the can
  • 1 cup Mexican Blend Shredded Cheese
  • Toppings – sour cream, green onions and cilantro, optional

Instructions

  1. Cook and drain hamburger, add taco seasoning and water, continue to cook taco meat. Add salsa and heat through, remove from heat.
  2. Set Scoops on a mini muffin pan or large cookie sheet. Using a butter knife, spread a small amount of beans into chip.
  3. Add a spoonful of taco meat
  4. Top with cheese. {this step is a little messy}
  5. Bake at 350 degrees for about 10 minutes or until cheese is completely melted.
  6. Top with Sour Cream, Green Onions, Cilantro or other toppings you like.
