Spring has sprung here in Indiana…the flowers are blooming, the trees are starting to bud and the weather has been unbelievable! Let’s hope it sticks around!! On Wednesday, we shared Italian Meatballs Subs and served them Pasta Salad.
So I thought it would be the perfect opportunity to share with you our favorite meal when the weather is nice and we don’t want to be in the kitchen cooking…Deli Style Pasta Salad!
One of the things I love most about the Pasta Salad…you can add a few extra ingredients or load it up like we do! Pair it with cheese and crackers and you have a quick, veggie and protein packed dinner!
We have been longing to get outside all Winter! Spoon this Deli Style Pasta Salad into glass jars, add the lid and pack them in your cooler or picnic basket! And remember…kids love eating their dinner out of unusual containers…it’s just FUN!

Ingredients
- 1 box of tri-colored rotini pasta, cooked according to the directions on the box
- 1 small head of broccoli, cut into small pieces
- 2 tomatoes
- 1/2 large green pepper, chopped small
- 8-10 mushrooms, sliced thinly
- 1/2 block chunk Mild Cheddar Cheese, cut into bite size pieces
- 1/2 block chunk Colby/Monterey blend, cut into bite size pieces
- 25-30 pieces of pepperoni, cut into quarters
- 4 slices of deli ham, cut into bite size pieces
- 1 bottle Italian dressing
Instructions
- Cook pasta according to the directions on the box, rinse in cold water
- Chop all the veggies, meat and cheese
- Add to pasta
- Add the Italian Dressing {you will probably use the whole bottle, but use it in stages, adding a little at a time and let the salad rest}
Notes
Liz says... This Pasta Salad is very versatile, you can add whatever extra ingredients you like. It's also best if you make it the day before, to give the pasta some time to soak up the dressing.

What I add to mine depends on what’s in the fridge and whither it’s as a side dish or main course. I usually use hard salami where you used pepperoni and crumble a slice or two of bacon. I almost always add carrots because I love raw carrots. Onions because I’m not sure I don’t know how to cook, with out chopping an onion first, lol. I don’t even like celery but if I have any I throw a stalk or two in for crunch (flavor hides pretty well under all the other great flavors). I’ve even been known to chop up a little cauliflower if I have it. Ranch dressing is pretty good in a pinch but I prefer just simply olive oil and lemon juice. But I tend to let everyone dress there on. I say eat what you enjoy.
