Summertime is busy! Between visiting friends and family, vacation, summer reading lists and gardening, sometimes dinner is the last thing on my mind. This Cauliflower Rice Bowl with Shrimp comes together so fast and is such a healthy option!

I have been trying to eat healthier this summer. I want to feel good and fuel my body with foods that will give me energy! But I also don’t want to spend all of my time in the kitchen. With just a few ingredients this Cauliflower Rice Bowl with Shrimp is fast, delicious and filling.

The first step is making the Cauliflower rice, it is so much easier than it sounds. Chop up your cauliflower into manageable pieces and throw it in the food processor. Pulse a few times until the cauliflower is about the size of rice. Make sure to just pulse and not blend, otherwise the cauliflower will have the wrong consistency.

Transfer the riced cauliflower to a frying pan and sauté. This will give your cauliflower rice the perfect texture! I use Olive Oil (about 2-3 tablespoons, enough to lightly coat the bottom of the pan) and add salt and pepper while it’s cooking. It takes about 5-7 minutes on medium heat. Be sure to stir it often.

Next up, the secret to making this meal even easier- SeaPak’s Shrimp Scampi. I love to keep a few packages in the freezer for this quick meal. The shrimp are already seasoned well and cooked with a butter, garlic and red pepper sauce. They really have the perfect flavor! The shrimp go from frozen to prepared in about 7-8 minutes (make sure to follow all the directions on the box!). I love choosing shrimp as my protein, they taste like summer, and the USDA recommends 2 4oz servings of seafood a week. Yes, please!

Ingredients

Scale
  • 1 (12 ounce) box SeaPak Shrimp Scampi (available in the freezer section)
  • 1 head cauliflower
  • 23 tablespoons olive oil
  • Salt and Pepper
  • 1 can (15 oz) fire roasted corn
  • 1 can (15 oz) black beans

Instructions

Cauliflower Rice

  1. Cut cauliflower into florets
  2. Add cauliflower in batches to food processor
  3. Pulse in food processor until small rice forms – about 5-10 seconds
  4. Heat large skillet with olive oil to medium high heat
  5. Add cauliflower rice and stir to coat with oil
  6. Add salt and pepper
  7. Cook for 5-7 minutes, stirring often
  8. While the cauliflower rice is cooking, saute shrimp according to directions on box
  9. Assemble bowls with cauliflower rice, shrimp, beans and corn
  10. Add other ingredients if you like
