I don’t know about you, but I absolutely LOVE cornbread. Especially cornbread that is hot and fresh directly out of the oven. I have had cornbread I love and cornbread that’s not so great. The thing, in my opinion, that makes cornbread “not so great” is the sweetness and the texture. Sometimes cornbread can be dry and grainy. I made cornbread that turned out that way once so I decided to take matters into my own hands. I modified the recipe to make it much more to my (and my families) liking. This is what came out of that. If there was ever a perfect traditional cornbread recipe – this is it.

Maybe it’s because it reminds me of the cornbread my Mom would make growing up. We would always have cornbread as a side dish with a big bowl of chili or her special hamburger soup recipe. I can still picture sitting down at the table in the house I grew up in, all smiles at the meal about to be served. I can see the golden cornbread as it came out fresh from the oven. It is a big part of the wonderful sights and smells that made dinner in our house the best time of day.

Cornbread is fantastic plain, with nothing on it. It is also wonderful just with butter and of course my personal favorite is slathering it with both butter AND honey.

The other nice thing about this Traditional Cornbread Recipe is that this recipe can be made ahead – well at least most of it. I like to mix all the dry ingredients and store them in a resealable bag, then all I have to do is add the wet ingredients and into the oven the cornbread goes. We do this with our Pancake Mix too, it’s simply makes life easier.

Ingredients

Scale
  • 1 cup cornmeal
  • 1 cup white whole wheat pastry flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2/3 cup white granulated sugar
  • 1 cup milk
  • 2 eggs
  • 1/2 cup (1 stick) butter (softened)

Instructions

  1. Preheat oven to 400 degrees F. Spray 8×8 square baking pan with non-stick cooking spray
  2. Stir together dry ingredients
  3. Add the milk, eggs, and butter and beat until smooth
  4. Pour into prepared pan and bake for 20-30 minutes or until toothpick comes out clean
  5. I like to check mine at 15 minutes and turn the pan
