Sandwiches are all the rage now! They aren’t just for lunch anymore, you know? I think the best thing about sandwiches is you can have the same ingredients, and come up with several different sandwiches. These Grilled Italian Chicken Sandwiches were inspired by the Grilled Cheese with Sauteed Mushroom and Jarlsberg Cheese that I shared over on Hoosier Homemade. By adding the grilled chicken you experience another layer of taste and texture. Add a quick side salad or even a pasta salad and you have a meal.

Sandwiches are best known for cooking on a griddle, but preparing them on the grill is super easy and adds a smokey flavor undertone to the sandwich and also adds a crisp texture to bread. Just be sure to cook this over medium to medium-low heat on your grill to allow time to heat through without burning.

For the dipping sauce, we combined equal parts of Spicy Brown Mustard and Hellmann’s Mayo.

To save time and money, I grab a couple whole chickens when I see them on sale. Roasting them at the same time also saves on electricity or gas from your oven. Use leftover chicken in these sandwiches, or grill up chicken breasts. Be sure to grill extra, that will save you time in the kitchen too.

Using spray oil is easy and creates no mess…I Can’t Believe It’s Not Butter makes an Extra Virgin Olive Oil spray that is perfect for the task. Simply spritz on both sides of the bread and grill to the crispiness you desire. When you have flipped your bread once it is time to add the other ingredients, we found it was easier and caused less of a mess to place the cheese on one side of the sandwich and the rest of the fixin’s on the other side. Once the cheese is melted and the sandwich is heated through, add the tomato and assemble your Grilled Italian Chicken Sandwich.

Ingredients

  • 1 loaf of Italian Bread {Walmart has them on the clearance rack, usually daily for less than $1}
  • Chicken, grilled or leftover, sliced thinly
  • Mushrooms, cleaned and sliced
  • 12 cloves garlic, minced
  • 1 tablespoon butter {to cook mushrooms}
  • Mozzerella Cheese, slices
  • Tomatoes, sliced
  • Olive Oil Spray {I Can’t Believe It’s Not Butter}

Instructions

  1. Slice chicken and set aside.
  2. Clean and slice mushrooms, melt butter in a small pan on the stove or side burner on the grill, add mushrooms and garlic, saute until mushrooms are tender and golden
  3. Heat grill to medium to medium-low.
  4. Spray one side of bread with olive oil spray and place on grill, sprayed side down.
  5. Top one side of the bread with 2 slices of cheese.
  6. Top the other side with chicken and mushrooms.
  7. Heat until cheese is melted.
  8. Remove from the grill, add tomatoes, and place sandwiches rogether.
