Visiting your local Farmer’s Market in the height of summer it’s sure to be overflowing with the bounty of the harvest, one of which is a lot of Zucchini! And although Zucchini is a vegetable that has been joked about because it is so abundant, it really is a wonderful and versatile vegetable. In my opinion, you can never have enough Zucchini Recipes.
Equally good simply grilled or baked into your favorite cake or muffin, I don’t think we can have too many zucchini recipes! So I’ve pulled together some of our favorite recipes using this fabulous vegetable, as well as some yummy-looking recipes from others – including some great ways to preserve zucchini for the rest of the year.
When choosing a Zucchini, the smaller ones are more preferable, although I love the huge baseball bat size for grating and baking with. To store your zucchini, wipe with a paper towel (don’t wash), place in sealed bag and keep in the refrigerator for up to 5 days.
