Tomatoes and summer seem to go hand-in-hand. So many of our favorite summer recipes use tomatoes and it seems like everyone wants to grow at least one tomato plant to get that warmed-by-the-sun tomato flavor that just can’t be found in store-bought tomatoes. Whether eaten simply sliced with a bit of salt and olive oil or as the star of a wonderful salad, tomatoes find their way onto almost every meal when they’re in season – and then we can preserve them to enjoy all year long!
There are so many varieties of tomatoes now – from sweet grape and cherry sizes up to large heirloom beefsteak tomatoes, and in colors from yellow to almost black. Each type lends it’s own unique flavor and texture to any recipe you choose. In fact, when tomatoes are in season, it’s the choosing that’s often the hard part!
In researching the recipes for this Farmer’s Market Friday, I focused on different types of recipes that would highlight a variety of tomatoes and cooking techniques and give you a couple of ways to preserve your bounty. I even included a scone recipe just for fun!
