Happy Labor Day! I hope you are all enjoying your holiday and a little relaxing. We took the weekend off, so we will be working today. Over the weekend we made this delicious Cheesy Mashed Potato Casserole and just had to share it with you.
It’s simple enough for weeknight meals, but special for holiday gatherings too.
The Mashed Potato Casserole is also perfect for a make-ahead dish. Let cool on the counter, then wrap with foil or plastic wrap and place in fridge. When you are ready to cook, remove the casserole from the refrigerator 30 minutes before cooking. Preheat oven to 350 degrees, uncover and bake for 20 – 30 minutes.

A great make-ahead casserole too
Ingredients
- 8–10 large potatoes, peeled, washed and cut into quarters
- 4 oz {half package} Cream Cheese
- 1/4 cup heavy cream, milk or half-and-half
- 1 stick butter
- 2 cups Sharp Cheddar Cheese, shredded
- 1/4 – 1/2 teaspoon salt
- 1/4 – 1/2 teaspoon seasoned salt
Instructions
- Boil potatoes until fork tender
- Mash until smooth
- Add cream cheese, about 3/4 of the butter, heavy cream, salt and seasoned salt
- Beat with an electric beater until smooth
- Fold in sharp cheese, reserving about 1/4 cup to sprinkle on top
- Spread into a glass pan
- Dot with remaining butter and sprinkle with cheese
- Bake at 350 degrees for about 20 minutes or until cheese and butter are melted and bubbling
- Cook Time: 20 minutes
