With only 3 ingredients and a couple optional ingredients, you can put together this Barbecue Chicken Salad in a flash. I usually make my own Barbecue Sauce {recipe below} but you can certainly use bottled sauce as well. We like the added crunch and flavor of the french fried onions and the bite of the sharp cheddar cheese.
Earlier this week, we shared how to roast 2 whole chickens at the same time not only saves you time but also money. This Barbecue Chicken Salad is a perfect way to use some of the leftover chicken. All you need to do is reserve 1 or 2 chicken breast for this recipe depending on how big of a crowd you are feeding.
If you already have the chicken breast cooked this salad can be from the counter to the table in 15 minutes or less. After you have cut the chicken into bite size add to a heated skillet with your Barbecue Sauce and heat through. While this is cooking rinse your lettuce and shake off the excess water and then coarsely chop the lettuce. Go ahead and remove the skillet from the stove once the chicken is heated through and add to the lettuce. Top with the french fried onions and sharp cheddar cheese. We serve alongside creamy ranch dressing, you can substitute any dressing you prefer of course.
This salad is perfect for lunch and hearty enough for dinner. A few months ago, while on a trip to Walmart headquarters, I was challenged to come up with a 3 ingredient meal…and so the Barbecue Chicken Salad was created.

- Mixed Greens {we used Romaine and Red Leaf Lettuce}
- Chicken, sliced thinly {leftover chicken saves time}
- BBQ Sauce {Store bought or make your own:3/4 cup ketchup, ½ cup brown sugar, 1 tablespoon + 1 teaspoon vinegar}
- French Fried Onions {optional}
- Cheese, shredded {optional}
- Wash lettuce, and cut into bite size pieces
- Slice chicken and place in skillet on stovetop
- Add BBQ Sauce and heat through
- Add chicken to lettuce
- Top with onions and cheese, if desired
- Serve with Ranch Dressing
