Summer has just officially made its way here. The longest day of the year, summer solstice, occurred this past Monday. The first day of summer, and I had nothing cool to enjoy it with! That simply wouldn’t do, so I whipped up a batch of Blueberry Kiwi Lemonade Slush.

The warm weather is finally here and what better way to sit back and relax on the porch than with a refreshing drink? I know I always enjoy something cold for those hot days — especially in celebration of the first day of summer! But this delightful drink can be enjoyed for the rest of the hot summer days. And with only a small bit of sugar added, this drink is anything but a guilty pleasure.

In fact, this slush has more going on than its sweet taste. Both kiwis and blueberries contain high amounts of health benefits for your body. Better yet, they’re as delicious as they are nutritious. You can add these to your lemonade with no worries, only taste!

Blueberry Kiwi Lemonade Slush

The preparation is simple. All you need are a few simple ingredients — kiwis, blueberries, lemonade mix, sugar, and ice. First prepare your lemonade. We had lemonade from our Skinny Strawberry Lemonade leftover, so we used that. But if you can also use a sugar free mix, add about 1/2 cup of sugar to one packet. The mix I used made about 2 quarts. With the mix this should take only a couple of minutes, even less if you already have some in the fridge. Peel your kiwis next — you only need about 2. Admittedly, this takes the longest time to prepare, but you’ll soon see that the taste is worth it. Gather all of your delicious blueberries — about 1 cup — and some ice — about 6 cups.

Dump all of the ingredients into a blender and let it do its thing. Blend it all until the ingredients are properly mixed and the ice is sufficiently broken up. After that, take a few glasses out, fill them up, and enjoy!

Summers can be scorching, but this drink can help you beat the heat. Just make yourself some; it only takes a short amount of time. Share some with a friend, and laugh together as you ignore the heat and indulge in something cool and refreshing. I know this is something I really enjoy doing with family or friends. Sharing simple pleasures is always nice when it’s with the people you love. If you’re like me, you can definitely appreciate what a simple treat can do when bringing family and friends together. Serves: 4-6 glasses
Ingredients
  • 2 cups of lemonade
  • 1 cup blueberries, washed
  • 2 kiwis, peeled
  • ½ cup of sugar
  • 6 cups of ice
Instructions
  1. Create your lemonade -- either homemade or from a mix. If from a mix, add the ½ cup of sugar.
  2. Wash blueberries and peel kiwis then add to blender.
  3. Pour 2 cups lemonade in to blender.
  4. Add 6 cups of ice.
  5. Mix well until ingredients are blended and ice is a slush consistency.
