Sheet Pan Dinners
These save any weekday because they have endless options, minimal fuss, with maximum nutrition and flavor.

This week’s rendition: veggies, chicken sausages, and a quick Harissa yogurt sauce.

I doubled down on the veggies and used the leftovers for salads, sandwiches, or into a bowl for the next day. It’s a great way to pack in the veggies and simplify lunch prep. Win win!
Grilled Fish & Veggies

Grill Season is upon us and our gas grill makes it so easy.
An amazing meal of grilled (or broiled) fish, steamed rice and veggies can be on the table in 20 minutes.

We have some version of this on repeat each week. Herbs, miso, honey, chimichurri, salsa, or Dijon mustard make easy sauces to dress up the fish or the veggies, adding flavor and variety.
Lentil Curry

There are so many ways to whip up a delicious curry on weeknights, and by varying the spices and veggies, it never gets boring.
Adding lentils is a simple way to layer in the protein without adding more dishes or cooking time to the meal-always a factor for weeknight cooking.

Always take a moment to sauté your spices in some oil with the onions to get the deepest, most flavorful essence of spices like cumin seed, anise, coriander, chili powder.
Add your veggies, water (or coconut milk!) and simmer for 15 minutes while the rice cooks.
Pasta Rustica

Another dish on our weekly rotation. Vary the veggies and the protein to keep things fresh.

Toss your favorite pasta with a flavorful pan of sautéed veggies and sausage for a simply satisfying meal. A little white wine, olive oil, and chicken stock makes a savory sauce, Don’t forget the freshly grated parmesan!

Easy Chicken Tacos

Tacos are always a crowd-pleasing Weeknight Wonder.
This slow-cooker version lets me prep earlier in the day for an extra busy night.
