When you have a house full of men sometimes getting away from the standard meat and potato fare can be a challenge, lucky for us there is a majority that like to experiment and have some fun with our meals. This Barbecue Pork Salad with Peaches is a spin on a recipe that Liz developed; Easy Barbecue Chicken Salad. I’ve changed only a few ingredients to adapt it to what I thought the overall taste I’m going for.
If you’ve been a regular visitor to Pocket Change Gourmet you have noticed a couple of things, I like pork and when given the option I prefer to prepare my meat on the grill. That’s where this recipe starts to develop. So let’s start by grilling up a few pork chops, being sure to season them with my pork seasoning blend and slathering barbecue sauce. After they have finished cooking to an internal teperature of 145 F take them off the grill and let them rest for 10 minutes.
While the pork chops are resting you’ve got time to assemble the rest of the ingredients to complete the meal. On a platter lay down a bed of lettuce, I normally will just use a salad blend from the store making this quick and easy. Then take and thinly slice the pork chop and place on top of the lettuce. Finally sprinkle french fried onions on top and for the finishing touch we add Diced Peaches with Cinnamon and Brown Sugar from Del Monte.
Now this may seem a stretch for your taste buds but think about it before you say Eeew. What does every great spice rub for pork have in it…a little cinnamon and brown sugar. We are just bringing the spice into the blend on a different level.
Serve with Ranch dressing or if you are a fan of barbecue sauce you can add a little extra too. We preferred the taste of the Ranch dressing but that’s just us…you decide.
The peaches not only add to the salad, we enjoyed them for a snack too. Liz is looking forward to baking a Peach Crisp with them.

- Pork Chops
- Barbecue Sauce {we like Sweet Baby Ray’s}
- Salad Mix
- French Fried Onions
- Del Monte Peaches with Cinnamon and Brown Sugar
Instructions
- Grill Pork Chops
- Let rest for 10 minutes
Assemble the salad
- On a platter lay a bed of Salad Mix
- Top with thinly sliced pork
- Sprinkle french fried onion rings over top
- Finish off with Del Monte Diced Peaches with Cinnamon and Brown Sugar
- Serve with your choice of either Ranch dressing or Barbecue sauce
- Prep Time: 5 minutes
- Cook Time: 10 minutes
