With Summer in full swing, and lots of Summer Entertaining coming up, it’s always great to have an easy cocktail that you can make at home. We like to keep things simple when it comes to our food, drinks, and also entertaining.
I have to admit, I had never tried a Mojito before mixing up this Blackberry Mojito. If I drink, which isn’t too often, I always chose a fruity type drink, I really don’t want to taste the alcohol. And these drinks were perfect!
A Mojito is a traditional Cuban highball, and typically made with rum, sugar, lime juice, mint and sparkling water. But we changed this drink by using Everclear®, the perfect solution for at home mixology. I would consider this Blackberry Mojito to be a classy cocktail, although it’s really easy to make.
Since we haven’t done a lot of mixed drinks, we do not own a muddler for muddling, so we used a wooden tart shaper that I have had for years, and it worked perfectly. The first step is to muddle the blackberries, sugar, mint, lime juice and Everclear® together until the flavors are combined. Muddling is simply crushing the ingredients in the glass before you add the liquid. Since we were making 2 drinks, we used a bowl. Then pour the mixture over ice and top with club soda.

Ingredients
- 2 oz. Everclear
- 6–8 fresh blackberries
- 2 tablespoons sugar
- 12 fresh mint leaves
- 1/4 cup fresh lime juice
- Club Soda
Instructions
- Muddle together the berries, sugar, mint, lime juice and Everclear
- Divide mixture into 2 glasses filled with ice
- Top with club soda
- Serve immediately
