Ingredients

Scale
  • Tomatoes – 4 Roma or 3 small vine ripe (about 1 pound)
  • 2/3 cups cucumber, peeled and chopped finely
  • 1/2 cup yellow sweet pepper, chopped finely
  • 2 tablespoons green onion, chopped finely
  • 1 fresh jalapeno, seeded and chopped finely
  • 1 tablespoon fresh cilantro, chopped
  • 1/2 teaspoon finely shredded lime peel
  • 1 tablespoon freshly squeezed lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground chili powder
  • 1/4 teaspoon ground cumin
  • Salt to taste

Instructions

  1. Chop and combine all ingredients in a medium bowl, mix well
  2. Serve immediately or cover and chill for up to 4 hours before serving
