Ingredients

- Tomatoes – 4 Roma or 3 small vine ripe (about 1 pound)
- 2/3 cups cucumber, peeled and chopped finely
- 1/2 cup yellow sweet pepper, chopped finely
- 2 tablespoons green onion, chopped finely
- 1 fresh jalapeno, seeded and chopped finely
- 1 tablespoon fresh cilantro, chopped
- 1/2 teaspoon finely shredded lime peel
- 1 tablespoon freshly squeezed lime juice
- 1 tablespoon olive oil
- 1/2 teaspoon ground chili powder
- 1/4 teaspoon ground cumin
- Salt to taste
Instructions
- Chop and combine all ingredients in a medium bowl, mix well
- Serve immediately or cover and chill for up to 4 hours before serving
