Description

Use up your leftover ham with this delicious Ham and Bean Crockpot Soup! It goes together in a snap and will have the whole family asking for seconds!


Ingredients

Scale
  • 1 leftover ham bone
  • 1 cup diced ham
  • 2 cans (15.5 oz each) Great Northern Beans
  • -Or use canned Cannellini beans
  • 2 cups diced carrots
  • 1 cup diced celery
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 2 teaspoons oregano, dried
  • 1 teaspoon rosemary, dried
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 cups water

Instructions

  1. In a large slow cooker, add ham bone and any leftover juices.
  2. Add remaining ingredients to slow cooker: ham, beans, carrots, celery, onion, garlic, oregano, rosemary, salt, pepper and water. Stir to combine.
  3. Heat on low for 7-8 hours or high for 3-4.
  4. Spoon into serving bowls and garnish with a few sprigs of fresh parsley (optional)
