And it lives up to its name because you don’t need to peel the peaches! It’s an old fashioned recipe with a modern twist. I love peach cobbler during peach season and have tried many recipes, but this one is absolutely delicious!
Ingredients
For Cinnamon Biscuits (Cobbler Topping)
1 cup Gluten Free cup for cup flour
1 cup almond flour
½ cup granulated white sugar
1 teaspoon baking powder
1 Tablespoon ground cinnamon
1 teaspoon vanilla extract
3/4 cup milk or cream
½ teaspoon salt
5 Tablespoons softened unsalted butter
1 Tablespoon reserved for sprinkling on top
Peach Filling
8-9 peaches sliced with skin (6 cups sliced peaches)
1/4 cup sugar
1 Tablespoon cornstarch
½ teaspoon salt
Instructions
Recipe for Easy Gluten Free Peach Cobbler:
Begin by removing butter from refrigerator to soften. Preheat the oven to 350° F and grease a 9×13 inch baking dish with butter. Set aside.
For the fruit filling:
- Next, wash and slice the peaches. No need to peel them. Place sliced peaches into a large bowl.
- Mix the cornstarch and salt into the 1/3 cup sugar. Sprinkle over the fruit and stir. Set aside to allow the mixture to macerate while you prepare the cobbler topping.
For the cobbler topping:
- Mix the softened butter and 1/2 cup sugar in a medium bowl. Cut the butter in with a pastry knife or mix with a silicone spatula until creamy.
- Then combine the dry ingredients together (both flours, sugar, salt, cinnamon, baking powder). Reserve one Tablespoon of sugar for the last step.
- Stir the vanilla into the milk.
- Then pour half of the flour mixture and half of the milk into the butter mixture and stir gently to combine. Repeat with remaining milk and flour mixture. Do not overmix or the dough will be tough.
Assemble the Cobbler:
- Pour the macerated fruit into the greased pan. Make sure to get all the peach juice from the bowl into the pan!
- Drop small spoonfuls of the cobbler topping onto the fruit. I prefer to leave them as biscuit-sized pillows, but you can spread them out with a silicone spatula to cover the whole surface if you prefer.
- Lastly, sprinkle the sugar over the top of the dough and place the pan in preheated oven.
- Bake for 35-40 minutes until the peaches are bubbly and the topping is golden brown.
- Enjoy your delicious cobbler warm with a dollop of whipped cream or a scoop of vanilla ice cream.

Notes
This Easy Peach Cobbler recipe makes about 6 servings, but you can simply double the recipe for more servings. In addition to being absolutely delicious, with no need to slice the peaches, it makes this Easy Peach Cobbler truly live up to its name.
