Description

This Corned Beef Hash is the perfect recipe to use up any leftover Corned Beef! Serve for breakfast, lunch or dinner!


Ingredients

Scale
  • 1 cup (8 oz) Corned Beef, cut thinly into pieces
  • 2 baking potatoes, peeled and cubed
  • 1 onion, diced
  • ¼ cup red bell pepper, chopped
  • 2 tablespoons oil
  • Salt and pepper to taste
  • 1 tablespoon Worcestershire Sauce
  • 2 cloves garlic, minced
  • ¼ cup heavy cream or half-and-half

Instructions

  1. In a large skillet, add oil and heat on medium. Add onions, potatoes, garlic, season with salt and pepper and cook, stirring often, until potatoes are soft and brown, about 10-12 minutes.
  2. Add bell pepper and Worcestershire sauce and cook until peppers are tender.
  3. Stir in Corned Beef and cream and cook until heated through.
  4. Serve with eggs and toast if desired.

Notes

Garnish with a sprinkle of chopped parsley, if desired
