Description
This Corned Beef Hash is the perfect recipe to use up any leftover Corned Beef! Serve for breakfast, lunch or dinner!
Ingredients

- 1 cup (8 oz) Corned Beef, cut thinly into pieces
- 2 baking potatoes, peeled and cubed
- 1 onion, diced
- ¼ cup red bell pepper, chopped
- 2 tablespoons oil
- Salt and pepper to taste
- 1 tablespoon Worcestershire Sauce
- 2 cloves garlic, minced
- ¼ cup heavy cream or half-and-half
Instructions
- In a large skillet, add oil and heat on medium. Add onions, potatoes, garlic, season with salt and pepper and cook, stirring often, until potatoes are soft and brown, about 10-12 minutes.
- Add bell pepper and Worcestershire sauce and cook until peppers are tender.
- Stir in Corned Beef and cream and cook until heated through.
- Serve with eggs and toast if desired.

Garnish with a sprinkle of chopped parsley, if desired
