St. Patrick’s Day is just around the corner! This Corned Beef Hash Recipe is the perfect way to use up any leftover corned beef. Serve any time of day for breakfast, lunch or dinner!

I have to tell you, I love St. Patrick’s Day. Seeing the grocery store meat sections filled with corned beef and all of the green four leaf clover decorations makes me happy.  Maybe it’s because it’s a reminder that Spring is just around the corner! Also, it’s another reason to celebrate, have family and friends over and eat delicious food.

We have a fantastic recipe for a Slow Cooker Corned Beef that is perfect to make for a party or just a special Irish dinner with family. I really enjoy eating leftover corned beef and now this corned beef hash has made another simple, amazingly delicious meal for breakfast, lunch or dinner the next day.

Corned Beef Hash Ingredients

All you will need are a few simple ingredients. With the delicious leftover corned beef, some veggies, a few added spices and oh yea, some heavy whipping cream, this meal has the making of the perfect comfort food.

Cooking Potatoes and Onions for Corned Beef Hash

First, heat two tablespoons of oil in a large skillet over medium heat. Add the onions, potatoes and garlic. Season with salt and pepper and cook, stirring often, until the potatoes are soft and brown. This takes about 10-12 minutes.

Then, add the bell pepper and Worcestershire sauce and cook until the peppers are tender. Stir in the corned beef and cream and cook until it’s  heated through. Oh, my mouth is watering. Can you smell it with me?

This is such an easy, hearty meal it can be served at any time of day. Garnish with parsley and serve with eggs and toast for breakfast or brunch over the weekend. I personally like to make a full spread of St. Patrick’s Day leftovers. Start out with a side of  deliciously dense Irish Soda Bread that is both savory and sweet. Ingredients

Scale
  • 1 cup (8 oz) Corned Beef, cut thinly into pieces
  • 2 baking potatoes, peeled and cubed
  • 1 onion, diced
  • ¼ cup red bell pepper, chopped
  • 2 tablespoons oil
  • Salt and pepper to taste
  • 1 tablespoon Worcestershire Sauce
  • 2 cloves garlic, minced
  • ¼ cup heavy cream or half-and-half

Instructions

  1. In a large skillet, add oil and heat on medium. Add onions, potatoes, garlic, season with salt and pepper and cook, stirring often, until potatoes are soft and brown, about 10-12 minutes.
  2. Add bell pepper and Worcestershire sauce and cook until peppers are tender.
  3. Stir in Corned Beef and cream and cook until heated through.
  4. Serve with eggs and toast if desired.

Notes

Garnish with a sprinkle of chopped parsley, if desired
