Ingredients

- 1 1/2 pounds Ground Beef
- 1 can Rotel tomatoes with lime and cilantro
- 6 strips bacon, diced
- 1 medium onion, diced
- 1 Jalapeno Pepper, seeded and diced finely
- 2 cloves garlic, crushed
- 1/2 cup barbecue sauce
- 1 teaspoon Cayenne pepper
- 1 teaspoon Chili powder
- 1 teaspoon ground Cumin
- 1 tablespoon Paprika
- 1 tablespoon Brown Sugar
- 1/2 teaspoon cracked black pepper
- 2 tablespoons Cornstarch
- 12 ounces Red Wine or Beer
Instructions
- In a large skillet on the stovetop, add the ground beef and bacon and cook until almost done
- Add onion, garlic and jalapeno pepper, cook for 2-3 minutes or until onions are soft
- Add Rotel tomatoes, barbecue sauce, spices, brown sugar, pepper and wine, stir to combine
- Simmer for 15-20 minutes
- Combine corn starch with 1 tablespoon water and stir until dissolved, add to chili to thicken
- Continue cooking for 30 minutes – 1 hour
- Serve warm with tortilla chips and toppings if desired
Notes
You can easily double this recipe to serve a crowd. To add more spice to the chili, use Habanero peppers or for less spice, leave out the Jalapeno pepper.
