Ingredients

  • 1 1/2 pounds Ground Beef
  • 1 can Rotel tomatoes with lime and cilantro
  • 6 strips bacon, diced
  • 1 medium onion, diced
  • 1 Jalapeno Pepper, seeded and diced finely
  • 2 cloves garlic, crushed
  • 1/2 cup barbecue sauce
  • 1 teaspoon Cayenne pepper
  • 1 teaspoon Chili powder
  • 1 teaspoon ground Cumin
  • 1 tablespoon Paprika
  • 1 tablespoon Brown Sugar
  • 1/2 teaspoon cracked black pepper
  • 2 tablespoons Cornstarch
  • 12 ounces Red Wine or Beer

Instructions

  1. In a large skillet on the stovetop, add the ground beef and bacon and cook until almost done
  2. Add onion, garlic and jalapeno pepper, cook for 2-3 minutes or until onions are soft
  3. Add Rotel tomatoes, barbecue sauce, spices, brown sugar, pepper and wine, stir to combine
  4. Simmer for 15-20 minutes
  5. Combine corn starch with 1 tablespoon water and stir until dissolved, add to chili to thicken
  6. Continue cooking for 30 minutes – 1 hour
  7. Serve warm with tortilla chips and toppings if desired

Notes

You can easily double this recipe to serve a crowd. To add more spice to the chili, use Habanero peppers or for less spice, leave out the Jalapeno pepper.
