Description

One dish family favorite. Serve on it’s own, or as a filling for tacos.


Ingredients

Scale
  • 1 pound ground beef
  • 2 tablespoons Homemade Taco Seasoning or 1 envelope store bought
  • 3/4 cup Beef Stock, canned or in a box
  • 1 (16 oz) can Diced Tomatoes with Green Chilies, drained
  • 1/2 cup Salsa, homemade or store bought
  • 2 cups frozen Corn, thawed
  • 2 1/2 cups grated Sharp Cheddar Cheese, divided – keep 1/2 cup for topping
  • Corn Chips, optional
  • Green Onions, sliced, optional

Instructions

  1. In a large skillet (we used a cast iron pan) brown the ground beef, drain if necessary
  2. Add the Taco Seasoning, Beef Stock, Tomatoes, Salsa, and Corn
  3. Heat through about 5 minutes
  4. Add 2 cup of cheese and heat through 10 minutes or so until cheese is melted and the flavors are well blended together
  5. Add 1/2 cup cheese on top until melted
  6. Top with corn chips and green onions if desired
  7. Serve immediately with chips and salsa, or as a taco filling
