Description
The classic banana bread of your childhood, with a contemporary twist. Blueberries plus a combination of almond flour and mixed gluten-free flour make this rich and fluffy Gluten Free Banana Bread absolutely delicious!
Ingredients

- 1 ripe banana (approximately 3/4 cup mashed)

- 1 cup blueberries (optional)

- 5 Tablespoons unsalted butter

- 1/3 cup granulated sugar

- 1/3 cup light brown sugar

- 3/4 cup almond flour (I like this finely ground one)

- 3/4 teaspoon kosher salt

- 2 eggs

- 1/2 teaspoon baking soda

- 1 teaspoon baking powder
Instructions
- First, preheat oven to 350° F and grease and flour 6×9 bread pan.
- Cut 5 T cold unsalted butter into cubes and add to large mixing bowl of electric mixer.
- Add brown and white sugars to mixing bowl and cream them together for 1 minute on medium speed.
- Combine flours, baking soda, baking powder, salt in separate small bowl and stir to combine. Add the mixture to the mixer with the creamed butter and sugar.
- Stir slowly to incorporate, the mix on medium speed for 30 seconds until the mixture resembles brown sugar in texture.
- Add 2 eggs and vanilla. Mix on medium speed 30 seconds.
- Add mashed, ripe banana and mix 30 seconds.
- Fold in 1 cup blueberries (or 1 cup chocolate chips, 3/4 chopped pecans, or walnuts)
- Bake in preheated oven for 40-45 minutes or until a knife inserted in the center comes out clean.
- Allow to cool in pan for 10 minutes.
- Gently draw knife around edge of loaf to loosen and turn loaf onto rack to cool.
- Shoo your children away and tell them it’s too hot to eat, then when they are out of sight, cut your first slice and enjoy it in peace:)
Notes
*This recipe doubles or triples easily, just do a little math and divide batter among two pans.
*This recipe calls for 1 cup of blueberries, but you can substitute 1 cup chocolate chips.
*You can also add 3/4 chopped pecans or walnuts, both of which can be raw or roasted and salted. I’ve even used candied pecans in this Gluten Free Banana Bread and it was awesome!
