- 1/4 cup butter, softened
- 3 tablespoons sugar
- 2 eggs
- 1/2 cup sour cream
- 1/2 cup milk
- 1 cup flour, all-purpose or gluten-free
- 2/3 cup yellow cornmeal
- 2 teaspoons baking powder
- 1/2 teaspoon salt
Instructions
- Preheat oven to 375 degrees and spray a muffin tin with non-stick cooking spray
- In a large bowl, cream the butter and sugar
- Add eggs and mix well
- Add sour cream and milk, mix well
- Combine dry ingredients and add to wet ingredients, mix well
- Divide into muffin tin
- Bake for 12-15 minutes until golden brown
- Serve immediately or cool and store in airtight container
