April 15th just passed and with it the deadline for filing your taxes. Was it a stressful week for you? Were you struggling to meet that last minute deadline? There may or may not have been a little bit of that all across the country. And when that happens, we often run for the quickest and seemingly, easiest dinner we can – take out or fast food. However, if we had a menu plan in place then we wouldn’t have needed to do that. Did you have a menu in place? If not, here’s one for next week to help you avoid the last minute, stressed out decision to go for take out or fast food.
There was a time in my life when a stressful week meant dinner was popcorn with a side of apple (when I was feeling guilty), a PB&J sandwich or a bowl of cereal. Now, however, a stressful week means my family and I eat home-cooked, wholesome, hot meals that help me feel less stress. This week’s menu plan is perfectly filled with those comfort foods that I want most when I’m stressed out.
Monday –Blueberry Pancakes and Fresh Fruit Smoothies
Tuesday – Swedish Meatball Casserole and Salad
Wednesday – Mexican Skillet
Thursday – Kung Pao Chicken and Rice
Friday – Pepperoni Pizza Ring
Saturday – BBQ Meatballs, Mac & Cheese
Sunday – Buttermilk Fried Chicken Strips, Mashed Potatoes and Corn
Dessert of the Week: Cotton Candy No Bake Mini Cheesecakes – flavor is easily changed
