April 15th just passed and with it the deadline for filing your taxes. Was it a stressful week for you? Were you struggling to meet that last minute deadline? There may or may not have been a little bit of that all across the country. And when that happens, we often run for the quickest and seemingly, easiest dinner we can – take out or fast food. However, if we had a menu plan in place then we wouldn’t have needed to do that. Did you have a menu in place? There was a time in my life when a stressful week meant dinner was popcorn with a side of apple (when I was feeling guilty), a PB&J sandwich or a bowl of cereal. Now, however, a stressful week means my family and I eat home-cooked, wholesome, hot meals that help me feel less stress. This week’s menu plan is perfectly filled with those comfort foods that I want most when I’m stressed out.
