Watermelon Salad with Tajín

Description

Sweet, spicy, tart, crunchy, and so refreshing- this Watermelon Salad with Tajín recipe checks all the boxes of a great summer salad. Perfect to enjoy on hot summer days, it comes together in a snap with a few summer staple ingredients and everyone’s favorite seasoning: Tajín! 


Ingredients

6 cups cubed watermelon (1/2 large or whole small melon)

1/4 bunch cilantro, stemmed

3 green onions. sliced

1 jalapeño pepper, thinly sliced

1/2 cup pepitas (pumpkin seeds), toasted

1 Tablespoon Tajín seasoning

1/8 cup  red wine vinegar

1/4 cup olive oil


Instructions

  1. First, cut up your watermelon into large bite-sized chunks for this recipe. I recommend placing the whole  watermelon in the refrigerator a few hours or the day before you plan to make the salad for  a crisp, cool, salad. 
  2. Next, mix up the dressing by combining the Tajín, red wine vinegar, and olive oil.  Whisk to emulsify. If you don’t have red wine vinegar, lemon juice or even lime juice would work, too.
  3. Slice up your jalapeño pepper, green onions, and cilantro. If you don’t have green onions, slivered red onions are a great alternative and adds a nice color to the dish.
  4. Lastly, drizzle the dressing over the salad and sprinkle with the toasted pepitas. If you are feeling zesty, you can zest a little lime over the salad, too. So bright and delicious.
  5. You could certainly add some Cotija cheese or feta crumbles, if desired, but the flavor combinations can stand alone here.
  6. Grab a fork and enjoy the juicy, delicious, spicy, savory goodness of this watermelon salad! 

Notes

*Wear a plastic glove on your hand that handles the jalapeños to avoid getting the capsaicin on your skin.

*You can leave the jalapeños sliced if it is mild. If it is very spicy, finely chop it to distribute the heat.

*Red onion can be substituted for green onions.

*Lime juice can be substituted for the red wine vinegar.
