Cooking fish is not something we do often, I’m not really sure why, it’s easy to cook, it’s a fast meal and also really good for us. This recipe for Tilapia with Italian Herbs is exactly what we were looking for…easy, quick and good for us! And to top it off…it’s full of delicious flavor!
This Wednesday is Ash Wednesday, which marks the beginning of Lent. The Christian observance during this six week period, begins with Ash Wednesday and ends on Easter, which this year is March 31st. During Lent, many of the faithful commit to giving up meat consumption, fasting or giving up luxuries. While our family are Christians, we have never really followed these traditions of Lent like many others do.
Tilapia is one of the more budget friendly fish that you can cook. The Tilapia that I used in this recipe are individually vacuum sealed, skinless and boneless and farm raised fillets available at Walmart.
The other ingredients are very simple as well..Olive oil, mushrooms, tomatoes, green onions and sugar snap peas. For the seasoning, I used Gourmet Gardens Italian Herbs and Garlic {not pictured}. The Gourmet Gardens are available in the produce area at Walmart.

Ingredients
- 2 teaspoons Olive oil, divided
- 4 (6 oz) Tilapia fillets
- 1 (8 oz) package mushrooms, sliced
- 1 cup grape or small cherry tomatoes
- 3 green onions, sliced
- 1 tablespoon Gourmet Gardens Garlic or fresh minced garlic
- 3 tablespoons Gourmet Gardens Italian Herbs or your favorite Italian seasoning blend
Instructions
- Heat 1 teaspoon Olive oil in a large skillet
- Add mushrooms and cook 4 minutes to release liquid
- Add tomatoes and garlic, cook 5 minutes or until tomatoes soften
- Add peas, cover and cook 5 minutes or until peas are bright green and tender
- Stir in green onions, remove vegetables to a plate, keep warm
- Coat tilapia evenly on both sides with Italian herbs
- Heat remaining Olive oil in pan, add fish and cook on each side 3 minutes
- Serve with warm vegetables
Notes
You could also serve with rice.
