Fall is definitely here, the temperatures are falling as well as the leaves. When the weather turns as it has we start to add more soups and stews to our menu, we have a favorite Chili that has been in our recipe box for several years and gets made alot. But every now and then you like to bring something different to the table for the family to try. That’s when we start pulling out our collection of food magazines and recipe books and also start scouring the internet for something new for the family.
We found this Slow Cooker Buffalo Chicken Chili and thought it would be a hit since we all like Buffalo Chicken Wings.
There are many choices out there to choose from but let’s keep in mind we are feeding a family of 5 that includes three teenage boys that can down alot of food when they get the chance and can be pretty picky about what they will try sometimes.
So here is the criteria for this new recipe…
- Something they haven’t tried before
- Something that is familiar
- And definitely economical
So after a few minutes of Liz and I scoping out various recipes we decided on this Slow Cooker Buffalo Chicken Chili from Betty Crocker and proceeded to adapt it to fit our family.
It meets all the criteria we were looking for…
- We’ve never tried Buffalo Chicken in a Chili form
- We like Chili
- The use of chicken thighs in the recipe is budget friendly
Being able to throw this in the slow cooker the night before is a huge time saver, I was able to prepare this in under 10 minutes. In the morning before leaving for the day I took the un-cooked chili out of the refrigerator and set the slow cooker so it would cook for 8-10 hours.
Our boys were able to finish up the last step of the recipe before we got home and have a home cooked budget friendly dinner.

Ingredients
- 2 1/2 pounds chicken thighs {boneless,skinless}, cut into chunks
- 1 large onion, chopped
- 2 stalks celery, chopped
- 2 medium carrots, chopped
- 1 can diced tomatoes
- 1 can black beans, rinsed and drained
- 2 teaspoons chili powder
- 1/2 teaspoon salt
- 2–4 tablespoons buffalo wing sauce {depending on how hot you want it}
- Shredded Cheese for topping {optional}
Instructions
- Spray slow cooker with cooking spray.
- Mix all ingredients except wing sauce and cheese
- Cover and cook on low for 8-10 hours
- Stir in wing sauce
- Serve with a sprinkle of cheese and sour cream if you like
- Cook Time: 8 hours
