Description

Tender shaved beef is stir-fried with ginger, garlic, carrots, and broccoli and dressed in a flavorful Tamari BBQ sauce. Sure to be a crowd-pleaser. Delicious GF dinner on the table in  20 minutes.

Ingredients

Scale
    • 1 1/2 pounds shaved beef

    • 2 large carrots, cut into strips (julienned)

    • 1 bell pepper, thinly sliced

    • 1 head broccoli, cut into florets

    • 1″ grated fresh ginger

    • 2 garlic cloves, thinly sliced

    • 1 Tablespoon vegetable oil (avocado or canola)

    • 2 green onions, sliced

    • Chili flakes or cilantro for garnish, if desired

    • 1 1/2 cups jasmine or white rice

For the sauce:

    • 2 Tablespoons Tamari

    • 1 Tablespoon Rice vinegar

    • 2 Tablespoons Japanese BBQ Sauce (I use Trader Joe’s because it’s gluten-free, but any brand will work.

Instructions

**Cook the rice according to package directions. If you want to make it into coconut rice, substitute one cup of coconut milk for one of the cups of water. For cilantro rice, chop fresh cilantro and mix it into the finished rice.

  1. While the rice cooks, cut the vegetables and set aside.
  2. Heat the oil in a large sauté pan over medium heat and sauté the carrots, garlic, and ginger for 2-3 minutes.
  3. Then add the shaved beef and cook for about 5 minutes, turning occasionally to separate the pieces, until the beef is cooked through.
  4. Drizzle the sauce (tamari, rice vinegar, BBQ sauce) over the meat and add the peppers and broccoli florets to the pot.
  5. Allow the dish to steam for about 5-7 minutes, then toss together before serving.
  6. Garnish with dried red chili flakes or fresh cilantro if desired.

Notes

This recipe has many variation possibilities: You can easily substitute other veggies, like bok choy, kale, green beans, Brussels sprouts for the broccoli, if you prefer.
