Ingredients
Scale
- 1 (2 1/2 to 3 pound) boneless pork sirloin roast
- 1/2 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 tablespoon oil, vegetable or canola
- 2 medium onions, cut into thin wedges
- 1 cup Root Beer
- 6 cloves garlic, minced
- 3 cups Beef Broth
- 3 cups Root Beer (two 12 oz cans or bottles)
- 1 cup bottled chili sauce
- 8–10 hamburger buns
Instructions
- Trim fat from meat, if necessary cut in half to fit into slow cooker
- Sprinkle meat with salt and pepper
- In a large skillet, heat oil and brown meat on all sides, transfer meat to slow cooker
- Add onions, 1 cup of Root Beer, Beef Broth and garlic
- Cover and cook on low for 8-10 hours or high for 4-5 hours
Sauce
- In a medium saucepan, stir together 3 cups Root Beer and Chili Sauce
- Bring to boil, reduce heat, simmer uncovered for about 30 minutes or until mixture is reduced to 2 cups, stirring occasionally
Sandwiches
- When meat is done, transfer to cutting board, using two forks, pull meat apart into shreds
- Serve on buns with lettuce and tomato and Root Beer Barbecue Sauce on the side (we used a squeeze bottle)
Notes
Make Ahead – Transfer pork mixture to airtight container, cover and chill for up to 24 hours. Or transfer to freezer container, cover and freeze for up to 1 month. Thaw overnight in fridge before serving. To reheat, transfer pork mixture to a saucepan, cover and heat over medium-low heat. If necessary, add 2-4 tablespoons water to keep mixture moist.
