Penne Pasta with Italian Sausage

Put dinner on the table in about 20 minutes. Recipe from PocketChangeGourmet.com. Adapted from Betty Crocker

Ingredients

  • 1 box {16 oz} Penne Pasta
  • 1 package {13-14 oz} Smoked Italian Sausage, cut diagonally
  • 1 small yellow summer squash, sliced
  • 1 small zucchini, sliced
  • 1 tablespoon olive oil for cooking veggies
  • 1/2 cup Italian Dressing {reduced fat is best}
  • 1/4 cup fresh basil, chopped
  • 1/3 cup Parmesan cheese, grated

Instructions

  1. Cook pasta according to the directions on the box
  2. Meanwhile, slice the squash, zucchini and sausage
  3. When the pasta is almost done, heat a skillet with olive oil, saute’ the squash and zucchini until slightly soft
  4. Add sausage and cook about 2 minutes
  5. Drain and add pasta and Italian Dressing to skillet, heat through
  6. Remove from heat, sprinkle with cheese and basil

Notes

Liz says…change this recipe by simply adding ham or other meat
